My research question was how do different types of sugar affect the texture and overall taste of the cotton candy (Dragon Beard candy)? This topic was important for us to research because it has a lot of history behind the recipe and the candy so we wanted to find out how we could change the recipe and tradition and see how it affects how the original candy should taste. So far we researched how to make the candy and the materials we’ll need, as well as some of the history behind the candy. We were planning on using vinegar, corn syrup, maltose, cornstarch, water and caster sugar to make the base for our cotton candy so we knew how the original recipe was supposed to taste. Then manipulate the type of sugar, so we would exchange caster sugar for brown sugar or icing sugar. Most of the adults that I talked to didn’t know about ancient Chinese cotton candy, but they were also interested to know about it and how it would change depending on types of sugar.
